Ingredients

3 tablespoons canola oil
1 tablespoon unsweetened coconut flakes
1 ½ teaspoons cumin seeds
1 teaspoon black mustard seeds
1 teaspoon ground turmeric
24 fresh or frozen curry leaves
3 dried arbol red chili peppers
1 cup frozen small green peas
3 red and orange bell peppers, peeled and finely chopped
1 (3 1/2-pound) head of green cabbage, cored and finely chopped
1 cup coarsely chopped cilantro
¾ teaspoon kosher salt

This quick and easy roasting turns the humble cabbage into a main course and makes it an extremely satisfying vegetarian dish. Coconut and curry leaves add a more southern flavor to the dish; North Indian chefs also cook the cabbage for much longer, until it is soft and slightly caramelized.
Combine the first 7 ingredients in a large skillet over medium-high heat; cook, stirring occasionally, for 3 minutes or until the chili is lightly browned. Add the peas, bell pepper, and cabbage; simmer for 5 minutes or until the cabbage is crisp and tender. Add the cilantro and salt.
