6 slices of bacon
2 Granny Smith apples, peeled and diced
2 shallots, finely chopped
1 tablespoon chopped fresh ginger
1 tablespoon minced fresh sage
1 cup fontina cheese, diced
6 1 1/2-inch thick pork loin chops, sliced in the center
1/3 teaspoon salt
1 ¼ teaspoons black pepper
2 tablespoons olive oil

Fry the bacon in a large skillet until crisp; remove the bacon and dry on paper towels, leaving 2 tablespoons of the filling in the pan. Crumble the bacon and set aside.Saute the apples, shallots, and ginger in the hot sauce for 5 minutes or until tender. Remove from the heat; add the sage.Combine the apple mixture, bacon, and cheese in a bowl.Make a horizontal incision in the thickest part of each pork chop, cutting on the other side, but not through, to make a pocket. Sprinkle both sides and the pocket of each pork chop with salt and pepper. Spread the apple mixture evenly over the pockets and secure with wooden chopsticks.Saute pork chops in 2 portions in preheated olive oil in a large skillet over medium-high heat for 1-2 minutes on each side or until golden brown. Place the pork chops on a lightly greased baking sheet or large, shallow baking dish.Bake at 425 ° C for 25-30 minutes or until cooked through.
