Tex-Mex Beef and Bean Dip

Ingredients

½ pound ground sirloin
2 tablespoons unsalted tomato paste
1-2 teaspoons chipotle chili powder
¾ teaspoon ground cumin
1 can pinto beans (15 oz), washed and dried
1 can diced tomatoes, skinless (14.5 oz)
¾ cup (3 oz) crushed queso fresco
¼ cup green onion, thinly sliced
3 oz baked tortilla chips (about 60 pieces, such as tostitos)

To make

You can prepare this festive sauce in advance and reheat it when you're ready to serve. Chipotle chili powder is very spicy, so adjust the amount to your liking.
Cook the beef in a large nonstick skillet over medium-high heat until browned, stirring occasionally until it crumbles. Drain well; return the beef to the pan. Add the tomato paste and the following 4 ingredients (including diced tomatoes) and bring to a boil. Reduce the heat and simmer for 5 minutes or until thickened, stirring occasionally.Spoon the meat mixture into a serving bowl; top with the chopped cheese and spring onions. Serve with tortilla chips.
