Tex-Mex Chicken Chili with Lime

Ingredients
1 tablespoon butter
2 tablespoons olive oil
1 large white onion, diced
1 medium-sized red onion, diced
1 poblano or bell pepper, peeled and diced
1 red or green jalapeno pepper, peeled and diced
1 large sweet potato, peeled and chopped
2 teaspoons ground cumin
2 teaspoons chipotle powder
2 teaspoons kosher salt
3 garlic cloves, minced
2 cans navy beans (16 oz.), dried
1 bottle of white ale (12 oz.)
4 cups minced chicken, baked in gourmet sauce
4 cups chicken stock
Filling: lime cream, fresh coriander, green onion, lime wedges
To make
Store-bought grilled chicken reduces the cooking time, while white ale adds piquancy, density and flavor.
Melt the butter in a roasting pan over medium-high heat. Add the white onion and the following 7 ingredients and simmer for 8 minutes or until translucent. Add the garlic and cook for 30 seconds.Add the beans and beer and cook for 5 minutes or until the liquid is reduced by half. Add the chicken and stock; bring to a boil over high heat. Reduce the heat to medium-low and simmer for 30 minutes until thickened. Serve with the desired fillings.Note: We tested with Blue Moon Belgian white wheat ale.
