Tilapia with Lemon-Garlic Sauce

Ingredients

4 tilapia fillets (6 oz.)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
3 tablespoons instant flour (such as vondra)
2 tablespoons unsalted butter, divided
1 tablespoon olive oil
1 tablespoon minced garlic
⅓ a glass of dry white wine

2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice

Incredibly simple, surprisingly delicious-this dish is refined enough for a treat and quick enough to brighten up the gloom at dinner on a weeknight. Garnish with parsley sprigs if desired.
Sprinkle the fish with salt and pepper. Pour the flour into a shallow bowl. Roll the fish on both sides in flour; leave the unused flour aside. Preheat a large skillet over medium-high heat. Add 1 tablespoon butter to the skillet; stir to coat. Place the fish in the pan; cook for 2 minutes on each side, or until the fish flakes easily when pricked with a fork. Remove from the mold; keep warm.Add the remaining flour and garlic to the pan; cook for 90 seconds or until lightly browned, stirring constantly. Add the wine and stock, stirring with a whisk; bring to a boil. Cook for 2 minutes or until slightly thickened. Remove the pan from the heat; add the remaining 1 tablespoon of butter, parsley, and lemon juice. Serve the fish with the sauce.
