Tortellini with Spinach and Cherry Tomatoes

Ingredients
1 pack (9 oz) fresh tortellini with three types of cheese
2 teaspoons olive oil
2 teaspoons bottled minced garlic
1/2 to 3/4 teaspoon ground red pepper flakes
2 cups cherry tomatoes, halved
¼ cup low-sodium, fat-free chicken stock or vegetable stock
1 tablespoon chopped fresh basil
¼ teaspoon salt
1 pack fresh spinach (6 oz)

In this recipe, use any flavored tortellini or ravioli. Spinach and cherry tomatoes add color, flavor, and nutrition to this simple pasta dish.
Prepare the tortellini according to the instructions on the package, without adding salt or fat.While the tortellini is cooking, heat the oil in a large nonstick skillet over medium-high heat. Add the garlic and red pepper flakes; simmer for 30 seconds.Add tomatoes, broth, basil, salt, and spinach to the pan; cook for 2 minutes or until the spinach wilts. Add the tortellini and cook for 1 minute.
