Triple-Fruit Scones

Ingredients

3 cups all-purpose flour
⅓ cup sugar
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
6 tablespoons chilled margarine or butter
⅓ cup chopped dried apricots
чашка cup of sweetened dried cranberries (such as raisins)
¾ cup low-fat buttermilk
2 teaspoons grated orange zest
1 large egg
1 large egg white
Cooking Spray
1 tablespoon sugar

To make

Dried cranberries and apricots, as well as orange peel, give these buns a sweet, tart taste. But you can mix and match any dried fruit to create your own fruit bun.
Preheat the oven to 400 degrees.Lightly pour the flour into dry measuring cups; smooth with a knife. Combine the flour, 1/3 cup sugar, baking powder, baking soda, and salt; grind the margarine using a pastry blender or 2 knives until the mixture resembles coarse flour. Add apricots and cranberries. Combine the buttermilk, orange zest, egg, and egg white; add to the flour mixture, stirring until it becomes moist.Place the dough on a lightly floured surface; knead lightly 4 times with your floured hands. Roll out the dough into a 12-inch x 6-inch rectangle. Cut the dough into 8 (3-inch) squares using a blunt knife or dough scraper. Cut each square into 2 triangles; place on a baking sheet covered with cooking spray. Sprinkle with 1 tablespoon of sugar; bake at 400 ° C for 12 minutes or until golden brown. Serve warm.
