Vanilla-Poached Peaches

Ingredients
1 cup of water
⅓ cup sugar
1 (3 1/2-inch) slice vanilla pods, cut lengthwise
3 large ripe peaches, peeled, pitted and quartered
2 tablespoons strawberry jam
4 teaspoons chopped pistachios
To make
You can replace the vanilla pods with 1 teaspoon of vanilla extract; just add it after the mixture has cooled. In addition, peaches can be replaced with nectarines.
Combine the first 3 ingredients in a medium non-aluminum saucepan; bring to a boil. Reduce the heat; add the peaches and simmer for 7 minutes or until tender. Remove the peaches with a slotted spoon; place in a shallow dish. Bring the cooking liquid to a boil and cook until reduced to 1/2 cup (about 7 minutes). Discard the vanilla pods; drizzle the syrup over the peaches. Cool to room temperature.Combine the canned food and 4 teaspoons of peach syrup; whisk to combine. Add 3 quarters of the peach and 1 1/2 tablespoons of the peach syrup to each of the 4 plates; sprinkle each serving with 2 teaspoons of the strawberry mixture and 1 teaspoon of the pistachios.
