White Bean and Sausage Ragout with Tomatoes, Kale, and Zucchini

Ingredients

1 tablespoon olive oil
½ cup chopped onion
2 servings chicken sausage (4 ounces each), cut into 1/2-inch thick slices
1 zucchini, quartered and cut into 1/2-inch thick slices (about 2 cups)
3 garlic cloves, peeled and minced
6 cups chopped kale (about 1/2 pound)
½ cup water
2 cans cannellini beans or other 16-ounce white beans, rinsed and dried
1 can skinless tomatoes, diced (14.5 oz)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

To make

It's a one-pot stew, a thick, well-seasoned stew filled with vegetables that will keep you warm on a cold winter evening. If you've never tasted kale, this dish makes the most of its sweet, earthy flavor.
Heat the oil in a large skillet over medium-high heat. Saute the onion and sausage for 4 minutes or until the sausage is lightly browned. Add the zucchini and garlic; cook for 2 minutes. Add the cabbage and other ingredients; bring to a boil. Cover, reduce the heat and simmer for 10 minutes or until completely warmed up. Serve immediately.
