Whole Wheat Buttermilk Pancakes

Ingredients
¾ cup all-purpose flour
¾ cup wholemeal flour
3 tablespoons sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups low-fat buttermilk
1 tablespoon vegetable oil
1 large egg
1 large egg white
Cooking Spray
¾ cup maple syrup
3 tablespoons butter
To make
Whisk up the puffy but satisfying pancakes in just 20 minutes.
Lightly pour the flour into dry measuring cups; smooth with a knife. Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl, stirring with a whisk. Combine the buttermilk, butter, egg, and egg white, stirring with a whisk; add to the flour mixture, stirring until it becomes moist.Preheat a nonstick skillet greased with cooking spray over medium-high heat. Place about 1/4 cup of pancake batter in the skillet. Turn the pancakes over when the tops are covered with bubbles and the edges look toasted. Serve with syrup and butter.
