1 medium-sized sweet potato, sauteed and chilled
2 large eggs, beaten
pinch of cinnamon (optional)
pinch of allspice (optional)
Cooking Spray
For the filling:
½ cup 2% Greek yogurt
1 teaspoon maple syrup
pinch of cinnamon

Yes, you can make sweet potato pancakes with just two ingredients (give or take)! If you are a little skeptical, then after trying them, you will believe it. They're simple enough for weekdays, but they're also delicious enough for a weekend brunch. We've added a delicious filling with just three ingredients. Prepare a couple of sweet potatoes in advance and try them out this weekend!
Place the sweet potatoes in a medium bowl; peel and mash. Whisk together the eggs and spices (if using).Preheat a large skillet over medium-high heat. Brush them with cooking spray (or vegetable oil, or butter, if you prefer). Spoon 1/4 cup batter onto the skillet. Let cook for 5-7 minutes.This is the hard part! These pancakes don't foam up like regular ones, so you'll really have to rely on a timer. Secondly, it is better to use two spatulas for turning, so that they remain together. After turning, cook for another 3-5 minutes, remove and serve.For the filling, mix yogurt with cinnamon and maple syrup. Spoon out the pancakes.
