Adobo-Marinated Pork Tenderloin with Grilled-Pineapple Salsa

Ingredients

1 cup fresh lime juice (approximately 8 limes)
2 teaspoons black pepper
2 teaspoons dried oregano
2 teaspoons ground cumin
1 ½ teaspoons salt
6 minced garlic cloves
2 pounds pork tenderloin
1 ½ teaspoons olive oil
Cooking Spray
¼ cup coarsely chopped fresh cilantro
2 tablespoons finely chopped green onions
Grilled pineapple salsa

To make

Marinate a juicy pork tenderloin in a mixture of lime juice, garlic and spices, then grill, and top with homemade grilled pineapple salsa.
Combine the first 6 ingredients in a 2-liter baking dish. Cut off the fat from the pork. Place the pork on a platter, turning to coat; cover and marinate in the refrigerator for 1 hour, turning the pork occasionally.Cook on the grill.Remove pork from platter; drain marinade. Brush with oil. Insert the meat thermometer into the thickest part of the pork. Place on a grill rack greased with cooking spray; cook for 25 minutes or until the thermometer reads 160 ° (slightly pink). Cut into 1/4-inch thick slices. Sprinkle with cilantro and green onions. Serve with grilled pineapple salsa.
