Ingredients

1 pound (about 4 cups) fresh brussels sprouts, cut stems, halved lengthwise
1 tbsp olive oil
Cooking spray
1 medium (4 oz) lemon
2 tablespoons melted unsalted butter
1 tsp finely chopped fresh thyme
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 oz. Parmigiano-Reggiano cheese, grated (about 1/3 cup)

Even picky foodies will love this crunchy, flavorful Brussels sprouts. This simple vegetable side dish turns out to be tender from the inside, and from the outside it gets a light and crispy texture. Fresh lemon juice, crushed thyme and parmesan cheese make these sprouts an excellent side dish that is sure to be ordered again and again.
Combine the Brussels sprouts and olive oil in a large bowl until smooth.Preheat the air fryer to 350 ° F for 6 minutes. Lightly brush the basket with cooking spray. Place the Brussels sprouts in a basket and cook until golden brown and crisp, 20-25 minutes, stirring in the middle of cooking.Meanwhile, trim the lemon on both sides. Put a lemon on one side. Using a sharp knife, carefully cut the peel and white core from the lemon pulp, starting at the top end and working your way down to the bottom end; discard the peel. Slice along each piece, separating the lemon slices from the shell; leave the lemon shell and slices separate. Cut the remaining lemon wedges into small cubes so that they are equal to 1 1/2 tablespoons; set aside. Squeeze the juice from the remaining lemon shell to 1 teaspoon.Transfer the Brussels sprouts to a medium bowl and toss with the butter, thyme, lemon juice, and diced lemon wedges. Transfer the Brussels sprouts mixture to a platter and sprinkle evenly with grated cheese; serve immediately.
