2 cups (approximately 8 1/2 ounces) all-purpose flour
⅔ cup granulated sugar
2 teaspoons baking powder
1 teaspoon of table salt

¾ cup apple cider (such as Zeigler's)
2 large eggs, lightly beaten
3 tablespoons (1 1/2 ounces) butter, melted and cooled
1 teaspoon vanilla extract
2 cups diced peeled apples (such as Granny Smith or Fuji) (approximately 3 apples)
3 cups (about 12 ounces) powdered sugar
½ cup apple cider (such as Zeigler's)
½ teaspoon table salt
½ teaspoon vanilla extract

These delicate, sweet pancakes have a unique autumn taste,and they can not be prepared easier. Just make sure you start with clean, fresh frying oil so that the fritters don't get a stale taste, and use a candy thermometer to keep a close eye on the oil temperature.
