Ingredients

1 can chilled thin-crust pizza dough (11 oz)
Spray for cooking vegetables
2 crunchy sweet apples (such as Gala, Fuji or Braeburn)
1 ½ teaspoons fresh lemon juice, divided
1 cup ricotta cheese
1 teaspoon tightly packed lemon zest
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ small red onion, thinly sliced
½ cup chopped almonds, toasted
1 teaspoon honey
Garnish with thinly sliced fresh parsley leaves

Preheat the oven to 425 degrees. On a lightly oiled (with cooking spray) jelly roll pan, squeeze out a 14-inch x 9-inch rectangle of pizza dough.Bake at 425 ° on the bottom rack of the oven for 20 minutes or until they are browned and crisp. Meanwhile, slice the apples into thin slices; stir in 1/2 tsp lemon juice.Combine the ricotta cheese, lemon zest, kosher salt, freshly ground black pepper, and remaining 1 tsp lemon juice. Spread the ricotta mixture over the baked cake.Place the apples on top of the ricotta mixture and sprinkle with onion slices and almonds. Drizzle with honey. Cut into small squares and serve immediately.Tortillas with chicken and apple sausage: Prepare according to the recipe, following step 2, without adding ricotta, zest, onion, almonds and honey. Saute 1 pack of smoked chicken and apple sausage (12 oz) in a skillet over medium-high heat for 6 minutes or until lightly browned; slice. Season with salt and pepper 1/2 cup whipped cream cheese; spread over the baked cake. Top with apples and sausage. Sprinkle with chopped fresh green onions and basil. Cook for 20 minutes, for a total of 40 minutes.
