Arugula with Warm Bacon Vinaigrette

Ingredients
4 slices of bacon
1 shallot, minced
4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
1 (5 oz) pack arugula or mixed greens
⅓ cup shredded goat's cheese
To make

Saute the bacon in a 10-inch nonstick skillet over medium-high heat for 6 minutes or until crisp. Remove the bacon, leaving drips in the pan. Crumble the bacon. Saute the shallots in the sauce for 2 minutes or just until soft.Transfer the shallots and sprinkles to a small bowl. Whisk together the butter and the following 3 ingredients. Place the arugula and vinaigrette on a platter. Top with goat's cheese and bacon.
