Asian Ginger Beef

Ingredients
1 12-ounce bag of frozen Asian vegetable mix (such as broccoli, carrots, green peas, and water chestnuts)
1 tablespoon vegetable oil
1 pound thinly sliced flank steak
Salt and pepper
½ medium onion, thinly sliced (about 1 cup)
½ medium red bell pepper, cut into thin strips (about 1 cup)
1 small garlic clove, chopped
2 tablespoons grated fresh ginger
¼ cup low-sodium soy sauce
2 teaspoons dark sesame oil
¼ cup low-sodium beef broth
2 teaspoons cornstarch
To make
Prepare the vegetable mixture according to the instructions on the package.Heat the vegetable oil in a large skillet over high heat. Sprinkle the steak with salt and pepper and place in the pan along with the onion and bell pepper. Saute for 2 minutes. Add the garlic and ginger and simmer for another 2 minutes.Add soy sauce, sesame oil and stock, bring to a boil and cook for 2 minutes, stirring occasionally. Add the vegetable mixture and mix well.In a small bowl, combine the cornstarch with 2 teaspoons of water until smooth. Add to the pan and cook, stirring constantly, until thickened, about 1 minute. Serve with rice, if desired.
