Asian Turkey Cabbage Cups

Ingredients
1 teaspoon grated peeled fresh ginger
1 ¼ pounds ground turkey
½ cup green onion, thinly sliced
1 tablespoon brown sugar
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons fresh lime juice
1 ½ tablespoons fish sauce
2 teaspoons olive oil
1 teaspoon dark sesame oil
1 jalapeno pepper, finely chopped
12 large leaves of napa cabbage (chinese) (about 8 ounces)
¼ cup chopped unsalted peanuts, sauteed
To make
Cool, crisp Napa cabbage leaves complete this quick dish with a tangy herb filling.
Preheat a large nonstick skillet over medium-high heat. Add the ginger and turkey to the pan; cook for 7 minutes or until the turkey is tender, stirring frequently. Drain the turkey mixture; place in a large bowl. Add the spring onions and the following 8 ingredients (via jalapeno); mix well. Spread 1/3 cup turkey mixture on each cabbage leaf. Sprinkle peanuts on top.
