Ingredients

¾ cup water
6 tablespoons sugar
2 cups chopped peeled avocado
½ teaspoon grated lime zest
2 tablespoons lime juice
⅛ a teaspoon of kosher salt

It is fruity and rich in cream, ideal for freezing on a stick.
Combine the water and sugar in a saucepan over medium-high heat. Cook for 4 minutes, stirring occasionally to allow the sugar to dissolve. Remove from heat; cool to room temperature. Combine the sugar mixture, avocado, lime zest, lime juice, and kosher salt in a food processor; grind until smooth. Spread the mixture evenly over 6 4-ounce ice cream tins. Cover the top with a lid. Freeze for 4 hours or until it is completely set.
