Bacon and Cheddar Mashed Potatoes

Ingredients
2 ½ pounds Yukon Gold potatoes or baked potatoes, peeled and coarsely chopped
½ cup skimmed milk
½ cup (2 oz) grated extra-spicy cheddar cheese
½ cup low-fat sour cream
½ teaspoon freshly ground black pepper
¼ teaspoon kosher salt
⅓ cup chopped green onion
2 slices of apple-smoked bacon, cooked and finely chopped
To make
Baked potatoes with cream filling-with sour cream, cheddar, green onions and bacon.
Put the potatoes in a large saucepan; cover with cold water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender. Drain well; return the potatoes to the skillet over medium-low heat. Add the milk; mash the potato mixture with a potato masher to the desired consistency. Cook for 2 minutes or until fully warmed, stirring constantly. Remove from heat. Add the cheese and stir until the cheese is melted. Add sour cream, pepper and salt. Top with spring onions and bacon.
