Bacon-and-Sweet Onion Jam

Ingredients
4 thick slices of apple-smoked bacon, chopped
1 tablespoon butter
2 medium-sized sweet onions, chopped
4 large shallots, chopped
½ cup balsamic vinegar
3 tablespoons light brown sugar
2 ½ teaspoons kosher salt
2 tablespoons chopped fresh green onions
2 teaspoons chopped fresh thyme
To make
Cook the bacon in a medium skillet over medium-low heat, stirring occasionally, for 8-10 minutes or until crisp. Remove the bacon and dry it on paper towels, leaving some droplets in the pan.Add the butter to the filling and stir until the butter melts. Increase the heat to medium; add the onion and simmer for 10-12 minutes or until soft. Add the shallots, vinegar, sugar and kosher salt and cook, stirring constantly, for 1-2 minutes or until the sugar is dissolved.Reduce the heat to low and cook, stirring occasionally, for 20-25 minutes or until the onions are very soft and brown. Remove from the heat; add the spring onions, thyme and bacon. Allow to cool completely (about 20 minutes). or refrigerate in an airtight container for 3 days.
