Bacon Potato Salad

Ingredients
6-8 medium-sized potatoes (about 3 pounds), peeled and cut into 1-inch-thick cubes
½ pound bacon, cooked and crumbled
6 chopped green onions
2 celery ribs, finely chopped
2 tablespoons diced pimento, drained
¾ teaspoon salt
¼ teaspoon pepper
½ cup mayonnaise
½ cup sour cream
Side dishes: paprika, celery sticks
To make
Potato salad with bacon is a delicious addition to this traditional summer dish.
Bake the potatoes in boiling water, covered, in a roasting pan over medium heat for 15-18 minutes or until tender. Drain and allow to cool slightly.Place the potatoes in a large bowl. Add the bacon, chopped green onions, and the following 4 ingredients. Mix mayonnaise and sour cream until smooth. Drizzle over the potato mixture, stirring gently to coat. Cover and refrigerate for at least 1 hour. Decorate if desired.
