Bacon, Tomato, and Arugula Pizza

Ingredients
1 pound chilled fresh pizza dough
Cooking Spray
5 slices of apple-smoked bacon
2 cups grape tomatoes, halved lengthwise
½ teaspoon ground red pepper flakes
1 tablespoon yellow corn flour
½ cup low-sodium marinara sauce (such as McCutcheon)
¾ cup (3 oz) grated partially fat-free mozzarella cheese
1 cup fresh arugula
1 teaspoon extra virgin olive oil
½ teaspoon white wine vinegar

Instead of serving the arugula salad as a side dish, place it on top of the pizza for a fresh taste that goes perfectly with the tomato and apple-smoked bacon filling.
Preheat the oven to 450 degrees.Put the dough in a bowl greased with cooking spray; let the dough stand under the lid for 15 minutes.Saute the bacon in a skillet over medium-high heat until crisp. Remove the bacon and crumble. Add tomatoes and pepper to the filling in the pan; cook for 2 minutes, stirring occasionally.Sprinkle a baking sheet with cornmeal; roll out the dough into a 12-inch circle on the prepared baking sheet. Spread the sauce evenly over the dough, leaving a 1/2-inch thick rim. Top with tomatoes and bacon. Sprinkle cheese on top. Bake at 450° C on the bottom rack of the oven for 17 minutes or until the crust is golden brown. Combine the arugula and other ingredients; sprinkle the arugula mixture on top of the pizza.
