Bacon-Wrapped Bourbon Figs

Ingredients
12 dried Kalimirna figs
¼ cup bourbon
1 (2-4 oz) slice of gorgonzola cheese, cut into 24 pieces
24 toasted pecan halves
12 slices fully cooked bacon, cut crosswise in half

The amount of cheese you will need depends on the size of the figs.
Combine the first 2 ingredients and 1 1/2 cups of water in a medium saucepan. Cook, covered, over low heat for 15-20 minutes or until the figs are plump and tender. Remove from heat; allow to cool slightly (about 15 minutes). Drain the figs; gently pat dry with paper towels.Preheat the oven to 350 degrees. Cut the figs in half lengthwise. Place 1 slice of cheese and 1 pecan half on a slice of each fig half. Wrap 1 piece of bacon around each fig and secure with a wooden stick. Place on a wire rack in a 15-inch x 10-inch jelly roll pan.Bake at 350 ° for 6-8 minutes or until the bacon is crisp and lightly browned.Note: We tested with fully cooked Oscar Mayer bacon.
