Baked Snapper with Chipotle Butter

Ingredients
½ teaspoon ground cumin
½ teaspoon paprika
¼ teaspoon salt
⅛ a teaspoon of ground black pepper
4 (6 oz) fillets of red snapper or other hard whitefish
Cooking Spray
1 tablespoon softened butter
1 canned chipotle chili in adobo sauce, finely chopped
Lemon wedges
To make
Chipotle pepper adds a smoky, spicy touch to the butter dusting. For a cooling side dish, mix diced cucumbers and tomatoes with low-fat sour cream.
Preheat the oven to 400 degrees.Combine the first 4 ingredients; sprinkle evenly over the fish. Place the fish on a baking sheet covered with cooking spray; bake for 15 minutes or until the fish is easily delaminated by pricking with a fork.While the fish is baking, combine the butter and chili. Spread the oil mixture evenly over the fish. Serve with lemon wedges.
