Balsamic Root Vegetables


1 ½ pounds sweet potatoes
1 pound parsnips
1 pound carrots
2 large red onions, coarsely chopped
¾ cup sweetened dried cranberries
1 tablespoon light brown sugar
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon salt
½ teaspoon freshly ground pepper

To make

To add spice, sprinkle the cooked and crumbled bacon on top just before serving.
Peel the first 3 ingredients and cut into 1 1/2-inch-thick pieces. Combine the parsnips, carrots, onions, and cranberries in a lightly oiled 6-quart slow cooker. 3 cm; top with sweet potatoes.Whisk together the sugar and the next 4 ingredients in a small bowl; pour over the vegetable mixture. (Do not mix.)Cover and cook on high for 4-5 hours or until vegetables are tender. Sprinkle with parsley before serving.
