1 ¾ cups all-purpose flour
½ cup sugar
1 teaspoon baking powder
¼ teaspoon salt

Preheat the oven to 350 degrees.Lightly pour the flour into dry measuring cups and smooth with a knife. Combine flour, sugar, baking powder and salt. Combine the banana, butter, vanilla, and egg in a medium bowl; add the flour mixture and pecans (the dough will be sticky).Place the dough on a lightly floured surface; using floured hands, shape the dough into 2 rolls (8 inches long). Place the rolls on a baking sheet greased with cooking spray; flatten to a 1/2-inch thickness.Bake at 350 ° C for 23 minutes. Remove the rolls from the baking tray; cool for 10 minutes on a wire rack. Cut each roll diagonally into 12 (1/2-inch) slices. Place the slices side down on a baking sheet. Reduce the oven temperature to 250 ° C; bake for 15 minutes. Turn the cookies over; bake for another 15 minutes (the cookies will be slightly soft in the center, but will harden as they cool). Remove from the baking tray; cool completely on a wire rack.
