Basil and Corn Farro Salad

Ingredients
1 pack (8.5 oz) of pre-cooked farro (such as from Archer Farm)
1 ½ tablespoons sherry vinegar
1 tablespoon olive oil
1 teaspoon dijon mustard
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 clove garlic, minced
1 tablespoon olive oil
1 cup fresh corn kernels (about 2 cobs)
½ cup chopped fresh basil
To make
If you can't find a farro prepared in advance, replace it with brown rice prepared in advance or boiled in bags.
Preheat the farro according to the instructions.Combine the vinegar and the following 5 ingredients (with garlic added) in a medium bowl; whisk to combine.Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat. Add the fresh corn kernels to the pan; saute for 3 minutes.Add the farro, corn and basil to the vinaigrette; stir to coat.
