Move over, mint: the spicy taste of basil gives the traditional tortilla a fresh touch. Prepare the syrup before the guests arrive — it is stored in the refrigerator for up to 2 weeks.
Prepare the basil syrup: In a large measuring cup suitable for a microwave, combine the sugar, 3/4 cup water, and basil.Reheat in the microwave on high power until the sugar is dissolved, 3-4 minutes.Let the basil stand in the syrup for 20-30 minutes, then strain (you have enough syrup for 4 drinks).Fill 2 highball glasses with ice. Pour 3 tablespoons of gin, 4 tablespoons of basil syrup and 2 tablespoons of lime juice into each glass. Toss and serve, garnished with basil sprigs.Tip: Add lemon juice and chilled water to the remaining syrup and serve the basil lemonade over ice.
