Basil Mojitos

Ingredients
Approximately 10 large basil leaves, divided
¼ cup plus 4 tsp extra-fine sugar, divided
¼ cup lime juice
½ cup white rum

From the same family as mint (usually used for making mojitos), basil makes the cocktail even more delicious by adding notes of cloves and anise. When mixed, the drink turns bright green.
Whisk 2 basil leaves and 1/4 cup sugar in a food processor until smooth; transfer to a plate and set aside.Place 6-8 remaining basil leaves in a large cocktail shaker with a few ice cubes, remaining 4 tsp sugar, and lime juice. Stir in the mixture with the back of a thick wooden spoon, holding it in the palm of your hand to avoid spilling until the basil is dissolved.Add the rum and a few more ice cubes to the shaker, cover and shake to blend. Rub a lime wedge around the edges of 2 cocktail glasses and dip in basil sugar (save the remaining sugar for other cocktails). Add a few ice cubes to each glass. Remove the lid from the shaker (do not strain) and pour the mixture into the glasses. Add the soda and stir to combine. Garnish with a lime wedge.
