Ingredients

1 regular size foil bag for baking
Cooking Spray
½ cup raw orzo (rice paste)
2 teaspoons olive oil, divided
1 cup diced tomatoes
¾ cup chopped green onion
½ cup (2 oz) shredded feta cheese
½ teaspoon grated lemon zest
1 tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon ground black pepper
3/4 pound shrimp, peeled and pitted
¼ cup chopped fresh basil

Basil shrimp served with feta and orzo cheese is a light, flavorful dish that's perfect for a weekday dinner. Serve with a mixed green salad.
Preheat the oven to 450 degrees.Brush the inside of the baking bag with cooking spray. Place the bag on a large, shallow baking dish.Boil the pasta in boiling water for 5 minutes, omitting the salt and fat; strain. Place the pasta in a large bowl. Add 1 teaspoon of oil and the following 7 ingredients (mix 1 teaspoon of oil with pepper). Put the orzo mixture in the prepared baking bag. Combine shrimp and basil. Spread the shrimp mixture over the orzo mixture. Wrap the edges of the bag to seal. Bake at 450 ° C for 25 minutes or until the shrimp is cooked through. Cut the bag with a sharp knife and remove the foil. Drizzle with 1 teaspoon of oil.
