Bean and Chicken Taquitos

Ingredients
20 flour tortillas (8 inches in size), cut in half
About 1 1/2 cups canned toasted black beans
Approximately 1 1/2 cups shredded grilled chicken (from half a 3-pound chicken)
Approximately 2 1/2 cups (10 ounces) grated mexican cheese mixes
Vegetable oil for frying
Toothpicks
To make
Cooking time: 1 hour.
Place 1 tortilla half on a work surface. Spoon about 1 tablespoon of beans to sprinkle with the filling. Sprinkle the filling with about 1 tablespoon of cheese.Starting at the end of the filling, roll the taquito into a tight cigarette shape and secure with a toothpick. Repeat with the remaining tortillas, beans, or chicken and cheese.In a large, wide saucepan, heat about 1 inch. Heat the oil over medium-high heat until it is heated to 375 degrees according to the fryer thermometer. Cook the taquitos, about 4 at a time, turning frequently, until golden brown, about 2 minutes. Using a slotted spoon, transfer the taquitos to a baking tray lined with paper towels. When cool, remove the toothpicks. Serve with salsa and guacamole.Note: A nutritional analysis is provided for each taquito.
