Beef-and-Pasta Casserole

Ingredients
8 oz rotini paste
½ cup breadcrumbs
⅓ cup grated parmesan cheese
1 ½ tablespoons olive oil
1 small onion, finely chopped (1/2 cup)
1 clove garlic, minced
1 ½ pounds lean ground beef
1 can stewed tomatoes (28 oz), minced
1 ½ teaspoons kosher salt
½ teaspoon dried oregano
½ teaspoon black pepper
1 ½ cups grated cheddar (5 ounces)

This family-favorite ground beef casserole with cooked rotini pasta paired with canned tomatoes, breadcrumbs, cheddar cheese and parmesan cheese is perfect for a busy weekday evening.
In a large pot of boiling salted water, cook the pasta, stirring occasionally, until al dente, about 10 minutes. Drain and set aside. In a bowl, combine the breadcrumbs and parmesan cheese; set aside.In a 3-quart heatproof saucepan, heat the oil over medium-high heat. Add the onion and garlic and cook for 4 minutes. Increase the heat to medium-high, add the ground beef and cook until the beef is lightly browned, about 7 minutes. Tip the beef into a colander to drain off any excess fat. Drain the pan and return the beef to the pan; reduce the heat to medium.Preheat the grill. Combine tomatoes, salt, oregano and pepper with beef and cook for 3 minutes. Add the remaining pasta and toss to combine. Cook for 2-3 minutes to allow the pasta to warm up. Remove from the heat and add the cheddar.Sprinkle the remaining breadcrumbs mixture over the pasta and cook in the skillet until golden brown, 2 to 3 minutes. Serve immediately.
