Beef Stew with Peppers

Ingredients
4 pounds boneless beef fillet, cut into 1 1/2-inch thick slices
Salt
2 tablespoons vegetable oil
2 onions, finely chopped
3 garlic cloves, finely chopped
1 14.5 oz. tomatoes cut into cubes, dry
3 red bell peppers, peeled, seeded, and cut into 1/2-inch thick strips
1 teaspoon dried oregano
2 tablespoons soy sauce
2 tablespoons instant tapioca
2 tablespoons washed capers
To make
Sprinkle the beef with salt. Preheat 1 tablespoon Heat the oil in a large skillet and saute the beef, in portions if necessary, on all sides, for a total of about 8 minutes. Transfer to a slow cooker. Add the remaining oil and onion to the pan and cook until softened, 3 to 5 minutes. Add the garlic and cook for 1 minute. Add to the slow cooker. Add tomatoes, pepper, oregano, soy sauce and tapioca.Cover and cook over low heat until the meat is fork-soft, 7 to 8 hours. Add the capers, season with salt if necessary, and serve.
