Ingredients

2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
3 large eggs
2 cups sugar
¾ cup vegetable oil
¾ cup buttermilk
2 teaspoons vanilla extract
2 cups grated carrots (about 3 large carrots)
1 can shredded pineapple (8 oz), dried
1 can coconut flakes with sugar (3 1/2 ounces)
1 cup chopped pecans or walnuts
Buttermilk frosting
Cream cheese frosting

To make


Mix the first 4 ingredients together.Beat the eggs and the next 4 ingredients in an electric mixer on medium speed until smooth. Add the flour mixture, whisking on low speed until smooth. Add the carrots and the following 3 ingredients. Pour the batter into a 13-inch x 9-inch greased and floured baking dish.Bake at 350 ° C for 30 minutes; cover the pan loosely with aluminum foil to prevent browning, and bake for another 13 minutes or until a wooden stick inserted in the middle comes out clean. Drizzle the buttermilk frosting evenly over the cake; cool completely in the pan. Spread the cream cheese frosting evenly over the cake.
