Big-Batch Veggie Chili

Ingredients
2 large carrots, diced
1 medium onion, diced
1 tablespoon vegetable oil
1 pack chili seasoning kit (3,625 oz)
1 can tomato sauce (8 oz.)
3 cups tomato juice
2 cans diced tomatoes, skinless (14.5 oz)
2 cans of black beans (15 oz each), peeled and rinsed
2 cans of Great Northern beans (15 oz each), peeled and rinsed
1 large zucchini, chopped
1 yellow pumpkin, chopped
1 cup frozen whole grain corn
Filling: chopped fresh coriander, sour cream, chopped green onions, grated hot cheddar cheese, sliced tomatoes.
To make
Saute carrots and onions in preheated oil on 5-6 cubes. Bake in a roasting pan over medium heat for 7 minutes or until onions are translucent. Add half a bag of red chili pepper from the chili kit; add all remaining bags. Saute the mixture for 2 minutes. Add the tomato sauce and the following 7 ingredients.Bring to a boil; cover, reduce heat to medium-low, and simmer, stirring occasionally, for 30 minutes or until vegetables are tender. Serve with the desired fillings.Note: We tested with the Wick Fowler's 2 Alarm chili cooking kit.
