Black Bean Quinoa Salad with Chipotle Steak

Ingredients

5 teaspoons olive oil, divided
½ teaspoon kosher salt, divided
¼ teaspoon chipotle chili powder
¼ teaspoon freshly ground black pepper
2 tenderloin steaks (6 oz each)
2 tablespoons fresh orange juice
2 tablespoons red wine vinegar
1 tablespoon chipotle canned chili adobo sauce in adobo sauce
½ teaspoon ground cumin
¼ teaspoon honey
1 ½ cups cooked quinoa
1 cup unsalted black beans, washed and drained
¾ cup chopped red bell pepper
¼ cup chopped fresh cilantro
¼ cup green onion, thinly sliced
1 ½ cups fresh spinach leaves
1 ounce chopped feta cheese (about 1/4 cup)
½ cup ripe peeled avocado, sliced

To make

We love chipotle-grated sirloin, but this salad goes great with any leftover steak.
Preheat a grill pan over medium-high heat. Combine 1 teaspoon oil, 1/4 teaspoon salt, ground chili pepper and ground black pepper; grate steaks evenly. Transfer the steaks to the skillet; cook for 4 minutes on each side or until desired browning. Let stand for 10 minutes. Cut the steaks diagonally across the fibers into thin slices.Combine the remaining 4 teaspoons of oil, the remaining 1/4 teaspoon of salt, the juice, and the next 4 ingredients (including honey) in a large bowl, stirring with a whisk. Add the quinoa, beans, bell pepper, coriander, green onion, and spinach; stir to coat. Sprinkle with feta cheese. Spread the quinoa mixture evenly over 4 shallow bowls; top evenly with the steak and avocado.
