Bow Ties with Sausage and Broccoli Rabe

Ingredients
Salt and pepper
1 pound butterfly paste
1 bunch rabe broccoli (about 1 pound), peeled from stiff stems, coarsely chopped
2 tablespoons olive oil
1 pound italian sausage (sweet or spicy) without the skin
4 garlic cloves, minced
3/4 cup grated parmesan cheese
To make
Bring a pot of salted water to a boil. Cook the pasta until al dente, about 10 minutes, or as directed on the package. Add the broccoli rabe for the last 2 minutes of cooking.While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it into small pieces with a wooden spoon, until browned and tender, 8 to 10 minutes. Add the garlic and cook, stirring, until fragrant, about 2 minutes.Save 1 cup of the cooking liquid; drain the pasta and broccoli rabe, add to the pan with 1/2 cup of water, and mix well. Sprinkle the parmesan cheese on top and stir, adding more liquid to moisten if necessary. Season with salt and pepper. Serve with a sprinkle of parmesan cheese if desired.
