Braised Red Cabbage with Sausage and Apples

Ingredients
6 oz italian turkey sausage (approximately 2 links)
1 teaspoon vegetable oil
1 cup thinly sliced red onion
6 cups thinly sliced red cabbage (about 1/2 pound)
1 ½ cups finely chopped peeled Granny Smith apples
⅔ cup of apple juice
2 tablespoons dark brown sugar
2 tablespoons red wine vinegar
¼ teaspoon salt
¼ teaspoon dried thyme
⅛ a teaspoon of ground black pepper
1 bay leaf
To make
Cabbage gets a salty and sweet taste, inherent in sausage and apples. Serve with toasted sourdough bread.
Heat the oil in a large nonstick skillet over medium-high heat. Remove the skin from the sausage. Add the sausage and onion to the pan; cook for 4 minutes or until the sausage is lightly browned, stirring until it crumbles. Add the cabbage and other ingredients; bring to a boil.Cover, reduce the heat and simmer for 20 minutes or until the cabbage is tender, stirring occasionally. Discard the bay leaf.
