Breakfast Polenta with Warm Berry Compote

Ingredients
Compote:
1 tablespoon butter
3 tablespoons honey
1 tablespoon fresh lemon juice
Pinch of ground cinnamon
1 bag of assorted frozen berries (12 oz.)
Polenta:
3 cups 1% low-fat milk
½ cup dry instant polenta
2 tablespoons sugar
½ teaspoon salt

There is a lot of compote, so if you prefer less polenta, save a little to use as a filling for pancakes, waffles or ice cream.
To make the compote, melt the butter in a medium saucepan over medium heat. Add honey, juice, cinnamon and berries; bring to a boil. Reduce heat; simmer 5 minutes or until fully warmed through. Keep warm.To make the polenta, bring the milk to a boil in a medium saucepan. Slowly add the polenta, stirring constantly with a whisk. Add the sugar and salt and cook for 5 minutes or until thickened, stirring constantly. Serve with compote.
