Broccoli and Cheddar Mashed Potatoes

Ingredients
1 ¼ pounds red potatoes, cut into quarters
½ cup whole buttermilk
2 tablespoons plus 2 teaspoons olive oil, divided
1 cup chopped broccoli florets
2 teaspoons fresh lemon juice
2 teaspoons water
1 ¼ oz grated cheddar cheese
½ teaspoon kosher salt
¼ teaspoon ground black pepper
To make
Whisk together the mashed potatoes, adding juicy broccoli florets and melted cheddar cheese.
Place the potatoes in a microwave-safe bowl; cover tightly with plastic wrap. Cut a 1/2-inch incision in the plastic. Reheat in the microwave on high power for 8 minutes or until tender; transfer to a bowl. Microwave the buttermilk in a cup for 30 seconds; drizzle the buttermilk and 2 tablespoons of olive oil over the potatoes. Mash until smooth.While the potatoes are cooking, heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Add the broccoli florets to the pan; cook for 2 minutes, stirring frequently. Add the lemon juice and water to the pan; cover, reduce the heat, and cook for 4 minutes or until tender. Mix broccoli, cheese, salt and pepper with potatoes. Serve the potatoes immediately.
