1 cup chopped onion
2 garlic cloves, minced
3 cups low-sodium, fat-free chicken stock
1 pack (16 oz) broccoli florets
2 ½ cups low-fat milk 2%
⅓ cup all-purpose flour
¼ teaspoon ground black pepper
8 ounces light processed cheese, diced (such as Velveeta Light)

This classic broccoli and cheese soup, which is not inferior to many restaurants, can be easily prepared at home in 30 minutes. Preheat a large nonstick pot covered with cooking spray over medium-high heat. Add the onion and garlic; saute for 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium-high heat. Reduce heat to medium; cook for 10 minutes.Mix the milk and flour, stirring with a whisk, until smooth. Add the milk mixture to the broccoli mixture. Cook for 5 minutes or until slightly thickened, stirring constantly. Add pepper. Remove from the heat; add the cheese, stirring, until the cheese is melted.Put a third of the soup in a blender or food processor and whisk until smooth. Return the soup puree to the pan.
