Broiled Salmon with Lemon and Olive Oil

Ingredients

4 (6 oz) salmon fillets
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon grated lemon zest
3 tablespoons fresh lemon juice, divided
2 tablespoons extra-virgin olive oil, divided
1 teaspoon fresh or dried rosemary
Spray for cooking vegetables
2 cups hot brown rice
4 cups arugula or raw spinach
Side dishes: lemon slices, rosemary sprigs

This is a very nutritious dish that has a wonderful citrus flavor thanks to lemon. Monounsaturated fats from olive oil, Omega-3 fatty acids from salmon, and fiber from brown rice make for a heart - healthy recipe.
Sprinkle the salmon fillets evenly with salt and pepper.Put the fillets, lemon zest, 1 tablespoon lemon juice, 1 tablespoon oil, and rosemary in a large zippered plastic bag. Seal and flip to coat. Chill for 30 minutes.Remove the fillet from the marinade, drain the marinade. Place the fillets, skin side down, on a grate greased with cooking spray, in a baking dish lined with aluminum foil.Simmer the fish 5 1/2 inches away from the heat for 10-12 minutes or until the fillet is easy to cut with a fork.Place the rice and arugula on a serving platter; top with the fillets.Whisk together the remaining 2 tablespoons of lemon juice and 1 tablespoon of oil; drizzle evenly over the fillet.
