Brown Butter Gnocchi with Spinach and Pine Nuts

Ingredients
1 vacuum-packed gnocchi (16 oz.) (e.g. Vigo)
2 tablespoons butter
2 tablespoons pine nuts
2 garlic cloves, minced
1 (10-ounce) package fresh spinach, torn
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup (1 oz) finely chopped parmesan cheese
To make
Combine pasta-like potato dumplings with spinach and parmesan cheese to create a light and flavorful dish in minutes.
Prepare the dumplings as directed on the package, without adding salt or fat; strain.Heat the butter in a large nonstick skillet over medium-high heat. Add the pine nuts to the pan; cook for 3 minutes or until the butter and nuts are lightly browned, stirring constantly. Add garlic to skillet; cook for 1 minute. Add the gnocchi and spinach to the skillet; cook for 1 minute or until the spinach wilts, stirring constantly. Season with salt and pepper. Sprinkle with parmesan cheese.
