Cajun Quiche in a Rice Crust

Ingredients
Cake mix:
2 cups cooked long-grain white rice, chilled
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
1 large egg
Cooking Spray
¼ cup (1 oz) grated low-fat cheddar cheese
Filling:
½ cup chopped onion
½ cup chopped celery
½ cup chopped red bell pepper
1 teaspoon bottled minced garlic
3 ounces chopped andouille sausage or kielbasa (about 2/3 cup)
egg substitute - ¾ cup
¼ cup plain low-fat yogurt
¼ teaspoon salt
¼ teaspoon hot pepper sauce (such as tabasco)
2 large egg whites
¼ cup (1 oz) grated low-fat cheddar cheese
To make
If you don't have any cooked rice on hand, use "boiled in bags" rice (for example, "Success" rice) and follow the instructions for cooking in the microwave. Cool the rice slightly before adding the egg. Total cooking time: 45 minutes.
Preheat the oven to 375 degrees.To make the crust, combine the rice, garlic powder, onion powder, 1/2 teaspoon salt, and 1 egg. Spread the mixture over the bottom and top sides of a 9-inch pie dish smeared with cooking spray. Evenly sprinkle the bottom of the cake with 1/4 cup grated cheddar cheese.To prepare the filling, preheat a medium-sized nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the onion and the next 4 ingredients (via the sausages); simmer for 5 minutes. Spread the mixture evenly over the prepared rice crust with a spoon. Combine egg substitute, low-fat yogurt, salt, hot pepper sauce, and egg whites; whisk together until smooth. Pour the egg substitute mixture over the sausage mixture. Sprinkle with 1/4 cup grated cheddar cheese. Bake at 375 degrees for 30 minutes or until the center is set. Let stand for 5 minutes before serving.
