Camembert Mashed Potatoes

Ingredients
1 ½ (8 oz) camembert cheese slices
11 cups peeled Yukon Gold potatoes, diced (about 4 1/2 pounds)
½ cup 1% low-fat milk
¾ teaspoon salt
¾ teaspoon freshly ground black pepper
Chopped fresh green onion (optional)
Freshly ground black pepper (optional)

The buttery taste and creamy texture of Camembert cheese accentuate the taste of these potatoes. Camembert is similar in taste and texture to Brie, which is a great substitute. The rind is easiest to remove if the cheese is well chilled.
Cut the cheese into 6 slices. Carefully remove the rind from the cheese; discard the rind. Slice the cheese; let it stand at room temperature while the potatoes are cooked.Place the potatoes in a large roasting pan; cover with water. Bring to a boil. Reduce heat; simmer 12 minutes or until tender. Drain in a colander; return the potatoes to the pan. Add the cheese, milk, salt and 3/4 teaspoon pepper; mash with a potato masher until smooth. Garnish with green onions and pepper if desired.
