To make
A few clever tricks take banana bread to the next level: frying slices of ripe banana in butter enhances the sweet banana flavor, and browned butter gives the glaze a nutty richness.
Preheat the oven to 350 degrees.Melt 3 tablespoons of butter in a large skillet over medium-high heat. Add the brown sugar and bananas; simmer for 4 minutes, stirring occasionally. Remove from heat; let cool for 10 minutes. Place the banana mixture in a large bowl. Beat with a mixer on medium speed until smooth.Combine the buttermilk and the following 3 ingredients (through the eggs). Spoon the flour into dry measuring cups; flatten with a knife. Combine flour, baking soda, and salt. Add the flour and buttermilk mixture alternately to the banana mixture, starting and ending with the flour mixture; beat on low speed until smooth. Place the dough in a 9-inch x 5-inch metal pan, greased with baking spray. Bake at 350 ° C for 1 hour or until a wooden stick inserted in the middle comes out with wet crumbs sticking to it. Cool for 10 minutes in the pan on a wire rack. Remove the bread from the pan and let it cool on a wire rack.Melt the remaining 1 tablespoon of butter in a small heavy saucepan over medium-high heat. Cook for 3 minutes or until the butter begins to brown; remove from heat. Add the powdered sugar and baking powder, stirring with a whisk until smooth. Drizzle the icing on the bread. Let stand until the glaze is set.
