Caramelized Banana Pudding

Ingredients
½ cup tightly packed light brown sugar
¼ cup butter
¼ teaspoon ground cinnamon
4 large ripe bananas, sliced
1 cup granulated sugar, divided
⅓ cup all-purpose flour
2 large eggs
2 cups milk
4 large eggs, divided
2 teaspoons vanilla extract
48 vanilla waffles
To make
This banana pudding is made up of bananas caramelized in brown sugar, butter, and cinnamon.
Cook the first 3 ingredients in a large skillet over medium heat, stirring constantly, for 2-3 minutes or until bubbles form. Add the bananas; cook for 2-3 minutes or until they are completely warmed through. Remove from heat.Whisk together 3/4 cup granulated sugar, the next 3 ingredients, and 4 egg yolks in a heavy saucepan. Cook over medium-low heat, whisking constantly, for 8 to 10 minutes or until a pudding-like texture is formed. (When whipped, the mixture will only begin to bubble and form soft peaks.) Remove from heat and add vanilla.Spread half of the banana mixture, pudding and waffles in 8 tins (1 cup each) or a heat-resistant glass dish. Add the remaining banana mixture, pudding, and vanilla waffles.Beat 4 egg whites on high speed with an electric mixer until frothy. Add the remaining 1/4 cup granulated sugar, 1 tbsp. l. Beat alternately until stiff peaks form and the sugar dissolves (2-4 minutes). Spread the meringue on the molds. Place the molds on a baking sheet.Bake at 325 degrees for 15-20 minutes or until the meringue is golden brown. Let cool on a wire rack for 30 minutes.
