Caramelized Onion, Gruyère, and Bacon Spread

3 ½ cups chopped onion
2 ounces Gruyere cheese, crushed and divided
2 tablespoons chopped fresh green onions, divided
⅓ cup of canola mayonnaise
⅓ cup low-fat sour cream

Serve this savory caramelized onion, gruyere and bacon spread on crackers or slices of bread. If you can't find Gruyere, replace it with raclette, fontina, or Swiss cheese.
