Caramelized Onion Spread

Ingredients
1 tablespoon olive oil
3 cups chopped yellow onion
4 garlic cloves, minced
½ cup (4 oz) 1/3-cup diced cream cheese, reduced fat
½ cup canola mayonnaise
2 tablespoons finely chopped fresh green onions
½ teaspoon freshly ground black pepper
¼ teaspoon kosher salt
To make
Serve with basic crostini or melba toast. For a better option, cut the onion into thin slices and caramelize as directed. Then combine the cream cheese, mayonnaise, pepper and salt; place on the crostini, and top with the onion and chives.
Preheat a large skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the onion and garlic to the pan; simmer for 5 minutes, stirring frequently. Reduce the heat to medium-low; cook for 35 minutes or until very soft and caramelized, stirring occasionally. Add the cream cheese to the pan and stir to combine. Remove from heat; add mayonnaise and other ingredients. Serve at room temperature or chilled.
